The Cooking Stop: Salmon, Baked Potato, Peas & Sweetcorn

We stick to one-step cooking processes as much as possible, but this Salmon, Potato, Peas, and Corn dish is one that my daughter has found easy. The potato is cooking while the other parts of the recipe are prepared so although it has a few ingredients and two cooking methods the process is still very simple.

Serves 1

Ingredients

1 Frozen Baked Potato

1 Salmon Fillet

1 cup Mixed Peas and Sweetcorn

                

Per Serve: 558 calories, 23g fat (5g saturated fat), 47mg cholesterol, 247mg sodium, 60g carbohydrates (10g sugars, 9g fiber), 27g protein

Method

  1. Put the Frozen Baked Potato in the air fryer on bake mode (160C/320F) for 30 minutes.
  2. While the Potato is cooking, put the Salmon into air fryer.
  3. While Potato is cooking, put Peas & Sweetcorn in a bowl in the microwave.
  4. Once the Baked Potato is finished cooking, air fry (200C/380F) Salmon for 8 Minutes and microwave Peas & Sweet Corn for 3½ minutes.
  5. While Salmon and Peas & Sweetcorn are cooking, take out Potato, cut in half, and add a little butter.
  6. Once Salmon and Peas & Sweetcorn cooked, serve and eat.

Other Suggestions

You could also put teriyaki sauce or hoisin sauce over the salmon after it is cooked.

Summary

While this recipe is a little more involved than some my daughter makes, using the air fryer and the microwave it is broken down into steps which makes it easy to do. It is also a balanced meal that supports creating healthy eating habits.
